Ingredients: Makes 12 servings
14oz Extra-Firm Tofu, drained
2 TBSP Reduced-Sodium Soy Sauce3
3 ea Garlic Cloves, minced
1 TBSP Honey
2 TBSP Grated Fresh Ginger
1 tsp Sesame Oil
1 pound Green Beans, trimmed
2 TBSP Olive Oil
1 ea Scallion, chopped
1/2 TBSP Sesame Seeds
1/4 tsp Red Pepper Flakes (optional)
Salt and Black Pepper to taste
Directions:
- Preheat oven to 400 degrees F. Line a baking sheet with foil or parchment and coat lightly with cooking spray. To drain the tofu, line a plate with paper towels and place the tofu on top. Cover with more paper towels and place a heavy item on top. Let rest about 10 minutes.
- Meanwhile, in a large bowl, whisk soy sauce, garlic, honey, ginger, and sesame oil together. Set aside.
- Cut the tofu into bite-size squares and place in a single layer on one half of the baking sheet. Drizzle with soy sauce mixture. Bake until golden on the bottom, about 12 minutes.
- Flip the tofu. Add the green beans to the other half of the baking sheet in a single layer. Drizzle with olive oil and sprinkle with red pepper flakes if desired. Season with salt and pepper. Return to the oven and bake until the tofu is golden on the other side, about 12 more minutes. Sprinkle with scallions and sesame seeds before serving.
