Ingredients: Makes 6 servings
2 tbsp water
1 tsp sesame oil
1 tbsp low sodium soy sauce
1 tbsp maple syrup
1 tsp minced garlic
1/2 tsp turmeric
1/8 oz chopped lemongrass
1/4 tsp salt
2 tbsp lime juice
2 tsp tahini
1 lb tofu
Directions:
- Trim tough ends from lemongrass. Roughly chop lemongrass.
- In a blender, combine lemongrass, sesame oil, tahini, soy sauce, maple syrup, garlic, lime juice, turmeric, water and salt. Blend until smooth.
- Drain tofu. Optional: Mark tofu blocks on a grill prepared with pan spray. Cut tofu into 1/2" cubes.
- Toss tofu with lemongrass marinade. Allow tofu to marinate overnight or for at least 2 hours.
- Prepare a baking sheet with pan spray. Place tofu on pan, discard excess marinade.
- Bake in a 350F degree oven until golden brown, about 10-15 minutes.
