Carrot Cake Overnight Oats

Ingredients: Makes 7 servings

Breakfast and Brunch

2 2/3 cup skim milk
4 ¼ cups old fashioned oats
1.5 cups grated carrots
2/3 cups raisins
1 tsp cinnamon
2 TBSP maple syrup
14 TBSP plain greek nonfat yogurt
1 tsp cinnamon


  1. Combine milk and oats and allow to soak overnight.
  2. In a medium bowl, combine carrots, raisins, cinnamon, maple syrup and set aside.

Serving Size:
One serving: Layer 1 cup overnight oats, ¼ cup carrot mixture (1.5 oz weight), 2 TBSP greek yogurt, cinnamon garnish.
