White Bean Dip

Ingredients: Makes 8 servings

15-ounce can white beans (cannellini or great northern), drained, liquid (called aquafaba) reserved
2 teaspoons chopped garlic
2 teaspoons chopped basil
2 teaspoons chopped oregano
2 TBSP extra virgin olive oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 TBSP fresh lemon juice
1/2 cup reserved aquafaba or water

Directions:

  1. In a food processor or blender, combine beans, garlic, basil, oregano, olive oil, salt, pepper, and lemon juice. Pulse to combine, adding either reserved aquafaba or water in small amounts until desired consistency.
  2. Serve with whole wheat pita and vegetable crudite.
