1 pound Flank Steak
1 Onion, thinly sliced
1 Red Bell Pepper, thinly sliced
1 Yellow Bell Pepper, thinly sliced
1 Green Bell Pepper, thinly sliced
1/4 cup Olive oil
2 tsp Chili Powder
1 tsp Ground Cumin
1 tsp Garlic Powder
1 tsp Paprika
Salt and Black Pepper to taste
1 Garlic, minced
8 Corn Tortillas 6-inch
Lime Wedges & Fresh Cilantro to taste
Directions:
- Preheat oven to 400 degrees F. Line two sheet pans with foil.
- Place steak, onion, and bell pepper in a large bowl. Drizzle with olive oil. In a small bowl, combine chili powder, cumin, garlic powder, paprika, salt, and pepper and then sprinkle over steak and veggies. Add garlic. Toss until evenly coated.
- Lay the meat and veggies onto your prepared pans in a single layer. Cook 12-20 minutes or until steak reaches desired doneness and veggies are crisp-tender. When you have about 5 minutes of cooking time left, wrap your tortillas in foil and place in the oven to warm up.
- Serve tortillas, steak, and veggies with lime wedges and fresh cilantro.
